CENTRAL THAILAND

Central Thailand’s cuisine is renowned for its balanced flavours and harmonious blend of sweet, sour, salty and spicy tastes. The region’s fertile plains provide an abundance of fresh ingredients, which are masterfully combined to create complex dishes. Staples include rich curries, hearty soups, and fragrant stir-fries, often accompanied by steamed jasmine rice. The cuisine reflects the cultural diversity and culinary traditions of the heart of Thailand.

Roti Mataba – Chicken Curry Stuffed Roti

A delicious fusion dish, Roti Mataba combines Indian influences with Thai flavours. The crispy roti is stuffed with a fragrant chicken curry made with cumin, coriander, madras curry, red onion, green chili, and garlic. It’s a popular snack that showcases the region’s diverse culinary heritage.

 

Khanom Gui Chai – Chive Cakes

These savory chive cakes are a favorite street food snack in Central Thailand. Made from a dough of rice flour and packed with fresh chives, they are fried to a perfect crisp and served with a sweet soy and chili dipping sauce. Their simplicity and bold flavour are quintessentially Thai.

 

Guay Tiew Ruea – Boat Noodle Soup

This hearty soup has its origins in the floating markets of Thailand, where vendors served it from their boats. It features beef meatballs, rice noodles, spinach, bean shoots, and a rich beef broth infused with cinnamon, star anise, and chili vinegar, topped with fried garlic. Its complex flavors and aromatic spices make it a beloved street food classic.

Khai Palo – Pork Belly & Egg Stew

This comforting stew features tender pork belly and hard-boiled eggs simmered in a flavorful broth with cinnamon, cloves, coriander seeds, five-spice powder, tofu, garlic, oyster sauce, and soy. It’s a traditional dish often enjoyed at family gatherings, showcasing the balance of sweet and savory flavours typical of Central Thai cuisine.

SOUTHERN THAILAND

Southern Thailand’s cuisine is celebrated for its bold and vibrant flavours, heavily influenced by Malay, Indonesian, and Indian culinary traditions. Known for its use of fresh seafood, aromatic spices, and rich coconut milk, Southern Thai cuisine offers a delightful mix of spicy, sour, and tangy tastes. Staples include spicy curries, tangy salads, and fragrant rice dishes, often accompanied by an array of fresh herbs and vegetables.

Sataw Pad Kapi Goong – Stink Bean Stir Fry with Prawn

A unique and flavorful dish, Sataw Pad Kapi Goong features the distinctive stink bean stir-fried with prawns. The dish is seasoned with shrimp paste, garlic, and chili, creating a bold and aromatic stir-fry.

 

Khua Kling – Spicy Pork Curry

This spicy pork curry is a Southern Thai classic. It features minced pork cooked with a spicy curry paste made from garlic, turmeric, dried chili, green peppercorn, galangal, lemongrass, and shallot. It’s known for its intense heat and robust flavors.

 

Goong Pad Makham – Tamarind Prawn Vermicelli

Goong Pad Makham is a delightful Southern Thai dish that combines the sweetness of palm sugar with the tanginess of tamarind and the savory depth of fish sauce, resulting in a harmonious blend of flavours. This dish features succulent prawns that are fried to perfection and then coated in a rich, tangy tamarind sauce. The addition of crispy rice vermicelli adds a delightful crunch, making it a well-rounded dish in both taste and texture.

Khao Yam – Fragrant Rice Salad

A vibrant and colourful rice salad, Khao Yam features jasmine rice mixed with cucumber, shrimp floss, snake bean, bean shoots, lime, betel leaf, lemongrass, roasted coconut, and pomelo. It’s dressed with a tangy and spicy sauce made from lemongrass, lime leaf, galangal, palm sugar, shallot and fish sauce.
